The Best Berry Baked Oatmeal Recipe

Healthy baked oatmeal is one of my go-to breakfast options. Baked oatmeal is always tastier than regular stovetop oatmeal, since it is less mushy and more cake-like! Plus, it is baked which allows the flavors to meld together and create a comforting dish that is hard to resist.  The addition of fresh berries here adds a vibrant color and a burst of natural sweetness and tart flavor! The bananas add moisture and extra sweetness as well, so you don’t need to add an excessive amount of sugar.  Feel free to make it ahead of time and keep it in the fridge for breakfast meal prep during busy weeks!

Ingredients Needed

Blueberries & Raspberries: These berries add a fresh burst of flavor! I used fresh berries, but you can use frozen if you have them on hand. You can even add frozen mixed berries, which usually includes strawberries. Bananas: Mashed, ripe bananas add an extra boost of sweetness and help to bind the berry baked oatmeal together. Old-Fashioned Oats: Old fashioned oats are best since they hold up well in the oven and lend a chewy texture. You can use quick oats, however, the texture will be mushier. Maple Syrup: For a bit of natural sweetness! You can opt for honey if you prefer. Chia Seeds: Chia seeds are good for you and add a lovely crunchy texture. Milk: Use your milk of choice! Any plant-based milks like coconut milk or almond milk, or dairy-based milk will work well. Eggs: Eggs will help the oatmeal hold its shape, making it sliceable and full of protein! Cinnamon: Adds a warm flavor to this breakfast oatmeal. Baking Powder: This will help the baking powder to rise slightly, giving it a lighter texture.

Tips for Success

Mix everything in one dish! This is a one pan berry baked oatmeal recipe, which makes it so convenient! Just mash the bananas and berries first, then add everything into the baking dish before baking. Don’t over bake! This berry oatmeal bake recipe is done once the edges are set and it no longer looks runny. If you over bake, it could turn dry and crumbly. Let it cool! I know it is tempting, but I recommend letting it cool until warm (not piping hot). If you cut into it when it is just out of the oven, it will not cut into nice squares! Customize your toppings. This oatmeal is delicious on its own, but I love topping it with things like plain yogurt, a drizzle of maple syrup, fresh berries, and crushed nuts!
