Veggie stock is much darker in color and will make the soup look less vibrant and gray. You can use low-sodium vegetable broth if you are worried about the salt level. Since the butternut squash is quite thick and creamy when pureed, there’s no need to use dairy or cream to thicken the soup.

- In a large pot, heat the oil over medium-high heat. Add the onion and cook occasionally stirring, until they start to brown. Reduce the heat to medium. Stir in the garlic cloves, add the cinnamon and nutmeg, and cook until fragrant and nutty smelling.
