published Feb 21, 2022, updated Sep 03, 2024 Throughout the Middle East, the Mediterranean, and even in Asia and Africa, you’ll be able to find some version of the ground meat patty known as “kofta.” Made with beef, lamb, or chicken that’s shaped into balls, patties or logs, and then grilled. They’re loved for their abundance of flavor and easy eating. Plate them, stick them on skewers, slather with hummus, or just spritz on some lemon juice before taking a bite — whichever way you serve it, kofta makes a spectacular appetizer, delicious meal, or satisfying leftover snack! My chicken kofta recipe is seasoned with smoky baharat spice, a blend of the sweet, earthy Middle Eastern flavors we love most. I use it with meat and vegetables alike, from my lamb and couscous bowls to vegetarian koshari!

Gas Grill – A gas grill is easier to use than charcoal, and it’s easy to keep an even temperature. Griddle Pan – Your best indoor option is a griddle pan. It offers a wide flat space and is good at retaining across its vast surface.

Storing and Reheating

Place patties in an airtight container and refrigerate for up to 4 days. They’ll start to dry out as the days pass, so eat them as soon as possible! To get some of the texture back when reheating, warm them in an oven or toaster oven, a skillet or saucepan, or in the air fryer. You can also microwave until warmed through, but the exterior will remain soft. Love this recipe? Share it with the world on Pinterest.
