The Best Corn Salsa Recipe
There is nothing quite like fresh corn salsa! It is refreshing and so tasty, and goes with just about everything! This salsa is the perfect summertime dish when fresh corn is super flavorful, but can be made year-round with frozen corn, too! It has the perfect combination of sweet, tangy and spicy flavors, and a wonderful, crunchy texture. Plus, it is versatile. You can add any veggie you have on hand that you think would be good here! It goes well as a dip with your favorite chips, or served with all of your grilled favorites like grilled chicken or steak kabobs!
Ingredients Needed
Corn: You can use fresh or frozen corn here! If using frozen, allow it to thaw first and drain off any excess liquid. Cilantro: Freshly chopped cilantro adds a lovely, herby flavor! Red Bell Pepper: Or yellow or orange! Adds a sweet flavor and nice crunch. Green Onions: Add some green onions or chives for a subtle flavor. White or Red Onion: I like to add some additional onion in the form of white or red onion! Jalapeño: For a bit of a kick! To keep this corn salsa mild, take out the seeds. If you like a spicy corn salsa, keep the seeds! Lime: Lime juice adds a tangy flavor and brings all the flavors together. Salt & Pepper: Season to taste!

Try with fresh, raw corn! You can totally eat raw corn and it is delicious. Simply cut the corn kernels off of the cob with a sharp knife. When it sits with the other ingredients in the lime juice it will tenderize and start to get extra juicy! For a smoky flavor, grill the corn first! If you don’t want to add raw corn, you can certainly boil it or grill it first! Grilling will offer an extra layer of smoky flavor. Add different veggies! You can definitely switch things up and add additional veggies like cherry tomatoes, cucumber, or diced avocado.
