published Mar 04, 2022, updated Sep 03, 2024 For fresh-tasting food that celebrates simple flavors, look to the Mediterranean. Whether you’re dining in France, Spain, Italy, or Greece, you’ll find plenty of produce on your plate. So while these are Greek green beans, know this dish is loved well beyond the country’s borders! They are traditionally prepared via a process called “giaxni,” which translates to “steamy” or “cooked in steam.” And the full name for this fasolakia recipe is fasolakia lathera, which means “braised green beans.” This should give you a pretty good idea of what you’re in for: green beans simmered alongside garlic, onions, olive oil, and seasonings in a tomato puree until melt-in-your-mouth tender. It’s a bit similar to briam, which includes a slightly different array of produce roasted with tomato puree, and just one of many Mediterranean vegetarian options at your disposal. Recommended Tools
Skillet – Select a large skillet or stainless steel pan that can slowly cook down all of the liquid in fasolakia. Additionally, choose one that comes with a lid, as the Greek green beans need to be covered to properly steam.
Storing and Reheating
Refrigerate any leftovers and eat within 5 days. While the vegetables won’t necessarily go bad in that time, they will become mushier with each passing day to the point the texture is plain unappetizing. Reheat fasolakia in the microwave or on the stovetop, stirring constantly to prevent any of the vegetables from sticking, until warmed through. Love this recipe? Share it with the world on Pinterest.
