Hot Chocolate Cookies

These Hot Chocolate Cookies are perfectly soft and chewy with tons of chocolate flavor. The technique for these cookies is similar to my Brownie Cookie. Melting the butter and chocolate together creates a rich extra chewy cookie. I also slightly under bake the cookies to get the nice fudgey texture inside. When the cookies are almost done baking a marshmallow gets set on top then baked for a few more minutes until set. After the cookies have cooled completely I drizzle them with an easy chocolate frosting. The cookies taste just like hot chocolate! This hot chocolate cookie recipe makes a great dessert to bring to a holiday party. They also make a great Christmas gift! For a fun twist top the cookies with crushed candy canes to make peppermint hot chocolate cookies.

How to Brown Butter

Browning the butter is easy and adds so much flavor to the cookies. Simply heat the butter in a small saucepan over medium heat. Cook for about 5-7 minutes swirling the pan occasionally. I recommend using a lighter colored saucepan when browning butter. It makes it easier to tell when the butter is browning and helps from burning the butter.

How to make Hot Chocolate Cookies

Make cookie dough: Start by pouring the browned butter into a large bowl along with the semi sweet chocolate chips. Stir until melted. Allow the chocolate to cool for 5 minutes. Stir in the brown sugar, vanilla and eggs, one at a time until combined. Fold in the dry ingredients and mix until combined. Refrigerate the dough for an hour. Bake (1st time): When you are ready to bake preheat the oven to 325 degrees. Line baking sheets with parchment paper or a non stick cooking mat. Roll out tablespoon size cookies and flatten slightly with the palm of your hand. Bake for 10 minutes or until set. Top with marshmallow: Remove from the oven and add half of a marshmallow cut side down to each cookie. Bake (2nd time): Place back in the oven and bake for 2-3 additional minutes. Cool: Allow the cookies to cool for 5 minutes on the baking sheet then transfer to a cooling rack to cool completely. Make chocolate frosting: Add the butter, milk and cocoa powder to a small saucepan. Bring to a boil and cook for 1 minute. Remove from the heat and allow the mixture to cool for 5 minutes. Pour the mixture into a large bowl along with the powdered sugar. Whisk until creamy and clump free. Immediately spoon glaze over cooled cookies. The longer frosting sits out the harder it becomes.

Can these Hot Chocolate Cookies be made in advance?

Yes! You can make these cookies up to 5 days in advance and store them in an airtight container at room temperature. Unbaked cookies can also be frozen for up to 3 months. These cookies are great to make ahead of time before the holidays. Just take some out of the freezer before guests come and bake as directed below!
