Travel leads to great revelations of what exotic fruit and vegetables are supposed to taste like. My love affair with mangos began in the Philippines more than a decade ago. To this day I haven’t been able to find mangos as sweet, fragrant and juicy as the ones I was able to enjoy daily during my year there. Even with the benefit of fresh fruit being accessible to us all year round we often have not a slightest idea of the real taste of some tropical beauties. Nothing can substitute for mangos ripened on the tree under the hot sun! And yet, every year I wait for them to appear in supermarkets and I buy a whole box. They are decidedly not as tasty as Filipino mangoes but they hit the spot. A couple of days ago I was browsing the World Food aisle in my local Sainsbury’s and I spotted a can of mango pulp from India. I had to buy it and have no regrets!

How To Make Mojito

The traditional recipe for mojito consists of rum, lime juice, mint and simple syrup. I first discovered how delicious they could be while vacationing on Canary Islands!

What is the flavour profile?

The original mojito taste of citrus and mint, and therefore is incredibly refreshing on a hot day. Here is a little spin on the traditional mojito. I’ve added mango pulp to give it a more tropical taste.

What rum should I use?

The best rum to use is not the most expensive, light rum since you will be mixing it with other things. Premium bottles and high prices are not necessary! Brad and I loved sipping it while sitting in our garden. It tastes just as beautiful virgin. So if you don’t care for rum,  skip it and have yourself a little taste of tropics! Or you can make a big pitcher without alcohol for a party and let people choose whether they want it with or without rum! My mango mojito is best enjoyed drinking through a straw since there are lots of little bits of mint floating around. I buy paper straws. They are prettier and so much better for the environment.
