This Mediterranean favorite is, as expected, all about the feta — a tangy, briny, soft sheep’s milk with a creamy bite. With a slightly sour, slightly peppery flavor unlike any other cheese, it’s downright addictive. My recipe is specifically for pistachio feta dip. The crunchy nut has a toasted, almost woody edge. Mixed with olive oil, herbs, garlic, and chilis, there’s a whole lot of dimension for such a simple dish. In addition to making you wildly popular at parties, feta dip will also enhance any of your favorite Mediterranean dishes — it’s great with meat and vegetables alike. Serve it slathered on flatbread, with souvlaki, kebabs and other skewers, kofta, or anything else that could use a tangy, creamy, cheesy addition.

Food Processor – You can get away with a blender, but you’ll need to start with pre-chopped/crumbled/diced pistachios. A blender usually can’t break them down enough. Juicer & Zester – Nothing compares to the taste of fresh lemon juice and zest.
Storing
Homemade pistachio feta dip will keep in the refrigerator for up to 1 week. Give your leftovers a good stir before serving to reincorporate any liquid/oil that might be pooling on the surface.
Pistachios – Other great nuts to add include pine nuts, walnuts, and almonds. Extra Virgin Olive Oil – Quite a bit of olive oil goes into this feta dip recipe, so it’s worth using the good stuff. The best quality olive oil is packaged in a dark glass container. Feta Cheese – To elevate your homemade feta dip, get a block and slice off what you need — it’ll be creamier and have a fuller flavor. Fresh Dill & Cilantro – Dill is tangy, citrusy, and even a little licorice-like, whereas cilantro is lemony but peppery in a bright, herbaceous way. Together, they add just the right touch of freshness to this feta dip recipe. Garlic – Use as much or as little garlic as you want. I do recommend using at least a clove or two for an authentic Mediterranean taste. Red Chili – You can also use 1 teaspoon of red pepper flakes, or omit entirely for a mild dip. Greek Yogurt – You don’t need a lot — just enough to add smoothness, tang, and cohesion. For best results, use full-fat yogurt. Lemon Juice & Zest – We’re using the zest and juice of one whole lemon, which is roughly 2.5 tablespoons of juice and 1 tablespoon of zest.
