Time is just passing by quickly and here we are in the second month of the year. This is a special month for us as we became a complete family this month 9 years back. My second son turns 9 years old end of this month and we can’t wait to celebrate the special day. This is also a very busy time in school and I am trying hard to keep my cool juggling between the school and other kids’ activities. My first theme for this month’s BM is lunch box recipes. Bhawana of Code2Cook is hosting Srivalli’s Kid’s delight event this month. I am doing a kid’s delight theme after a long time and I am excited to share what I normally cook for my boys in the morning. My boys are not picky eaters and would take pretty much anything to school, but they still have their favorites. This Potato Masala Sandwich is one such recipe that they really like. This sandwich is pretty much a No Cook recipe, as there is no other cooking involved other than boiling the potatoes. I do this the night before in my Instant Pot, and my potatoes are ready to be mashed when I wake up the next day. Once the potatoes are boiled, we just have to mash them, add the spices, and layer them on the bread slices and toast. I use my sandwich maker to make this sandwich, but you can just cook it on a grill on the stovetop if you don’t own a sandwich maker. This sandwich maker has been with me for almost 18 years and it is still going strong. It is one of the first things that I purchased when I came to the US after my wedding. Preparation time - 10 minutes plus 20 minutes to boil the potatoes Cooking time - None Difficulty level - Easy
Ingredients to make Potato Masala Sandwich - Makes 4
Bread slices - 8 Potato - 3 (medium) Salt - to taste Red chili powder - 1 tsp Garam masala - ½ tsp Chaat Masala - ½ tsp Cilantro - 3 tablespoon (finely chopped) Green chilies - 1 (finely chopped, optional) Green chutney - 4 TSP Butter - as needed to spread on the bread slices
Procedure -
Boil the potatoes until they are fork-tender. Let it cool down and then peel the potatoes and mash them. Add the spices; red chili powder, garam masala, chaat masala, and then salt, green chilies, and cilantro, and mix well. This will be our stuffing for the sandwich.
Take 2 bread slices and on one slice, apply a thin layer of butter. Sprinkle some chaat masala over the butter (optional). Spread green chutney on the other slice. Take a good scoop of the potato masala and spread it evenly on one of the bread slices. Close both the slices and apply butter on the outside as well.
I used my sandwich maker to cook/grill the sandwich. You can also cook it on the stovetop in a grill pan.
Repeat the same with the rest of the bread slices and serve with hot sauce or ketchup.
My boys love it with ketchup.
