Fall recipes are not complete without cooking with sweet potatoes. Fall or not, sweet potato is one of our favorite vegetables and any day my boys prefer this over any other vegetable. The next best part is my boys love roasted vegetables. That is when I thought why not make Spicy Oven Roasted Sweet Potatoes over the weekend? As soon as the aroma of the sweet potatoes roasting in the oven started filling the house, the boys were behind me asking when will it be done. The minute it came out of the oven, they pounced on it right away asking me if they can taste test it. One piece became two and then three and so on. At that point, I had to force them to not touch it until I was done with photographing it. This was a great hit in the house and the only sad part was they wanted more. I promised my little one that I will make him some for his school on Monday. This recipe for the Spicy Oven Roasted Sweet Potatoes cannot be any simpler. All it needs is a little bit of tossing and then baking. I used spices that my family would prefer. You could alter it or add more or less of any spice that you like. Sweet potato paratha is one of our favorite recipes that I make with vegetables. But now after making this Spicy Oven Roasted Sweet Potatoes, it appears that this might just become our new favorite. Procedure to make Spicy Oven Roasted Sweet Potatoes -

Preheat the oven to 425 F. Grease a baking sheet with oil and keep it aside. Peel and clean the sweet potatoes. Chop it into 1-inch cube pieces and place it in a large bowl. Add the oil, salt, pepper, chili powder, garlic powder, and roasted cumin powder to the bowl and toss the sweet potatoes to mix them up.

Place the sweet potatoes on the prepared baking sheet in a single layer. Bake the sweet potatoes in the oven for 12 to 15 minutes. Remove it from the oven and then flip the pieces a few times and return to the oven and bake further for 10 to 15 minutes or until golden brown and well roasted.

Let it cool a bit and then serve!
