How to Make Sweet Potato Fries
Arrange the racks in your oven to the center and above then preheat to 400F. Peel your sweet potatoes and cut down the middle lengthwise then cut into quarter inch slices and once more into sticks.
Sprinkle with cornstarch then toss for even coverage. You can drop the potatoes onto the cutting board to get rid of any excess corn starch.
Transfer potato pieces to baking sheets lined with parchment paper or a silicone mat then drizzle olive oil and toss. If you have a spray bottle for your olive oil this is the perfect time to use it.
Arrange the sweet potatoes on your baking sheet leaving about an inch between each piece. Bake at 400F for 15 minutes.
Remove from oven then use tongs to flip each piece over. That’s a full 180 degree flip. Bake for an additional 8-10 minutes or until golden underneath. Turn oven off.
Season to taste with salt and any other spices you enjoy. You can return to your still warm oven for about 20 minutes to further crisp up and stay warm if desired.

Mind the rack position! Fries will burn when closer to the bottom of your oven. Center rack is perfect but you can have a rack towards the top as well, just allot more bake time for it. The easiest way to get an even distribution of corn starch is to sift it over the sweet potato then toss. You can prep ahead and soak your cut sweet potato in cold water for up to 24 hours. Some spices you might enjoy adding: cinnamon, chili powder, garlic salt, cumin, curry powder, cajun seasoning, and even minced parsley for a pop of color. Warm your fries in the oven at 300F for about 8 minutes. Cut the pointy tips off of your sweet potato pieces before baking, they tend to burn.
