German Potato Salad

We love this easy German potato salad because it is a nice change from the traditional mayonnaise potato salad! Warm German potato salad has the perfect amount of smokiness, acidity and tang. It makes a great side dish to bring either hot or cold to parties, potlucks or barbecues! This potato salad is loaded with fresh herbs to offset the heaviness of the bacon grease. This mayo free authentic german potato salad is made with only the grease from the bacon, vinegar and whole grain mustard. No mayonnaise or eggs needed!

Ingredients

Baby potatoes: We used baby potatoes because they hold their shape really well and don’t get mushy. You also don’t have to worry about peeling the skin either! You can substitute mini yellow potatoes or dice whole potatoes into bite size pieces. Bacon: Is essential to this dish. It give the dish so much flavor and acts as the dressing for the potatoes. Onion & Garlic: Are sautéed in the bacon grease and give the potato salad so much flavor. Vinegar: We love using red wine vinegar. However if you do not have that on hand feel free to substitute either apple cider vinegar or white wine vinegar. Whole grain mustard: Give this warm german potato salad a nice kick. You can also use yellow mustard, dijon or spicy brown mustard. Fresh herbs: We use fresh chopped parsley, chives, dill and thyme. If you don’t have fresh herbs on had substitute dried instead. Substitute 2 tsp dried parsley, 1 tsp dried chives, 1/4 tsp dried dill and 1/4 tsp dried thyme.
