We are almost getting near the end of the month-long A to Z Marathon. For the alphabet Y, I decided to make a simple breakfast Parfait with fruits that I like. We always have a bag of frozen blueberries in the refrigerator that I use for making Blueberry muffins or for my smoothies. This time I used it to make this delicious Yogurt Blueberry Banana Granola Parfait. My older son is fond of granola and thanks to our local Sprouts store, we always have access to a really good variety of granola. Now and then when he joins me for shopping, he gets to pick his choice of granola flavor. This time we had some French Vanilla almond granola that I used in my parfait. Lately, my husband and I have been trying out some lighter breakfasts. We have smoothies a couple of days a week, and I guess after I made this Yogurt Blueberry Banana Granola Parfait, we are covered for a couple more days. The choices of fruits or berries that we can use in the Parfait are based on individual preference. We can use fresh fruits or defrosted frozen fruits to layer the parfaits. I am looking forward to trying out different combinations. Papaya Yogurt Smoothie Strawberry Banana Smoothie When we talking about fruits and you have more bananas in your fruit basket, then you have to try this Air fryer banana s’mores. These are so easy to make and you could bring the outdoor camping feel inside the kitchen. I used plain Greek Yogurt today to make the Yogurt Blueberry Banana Granola Parfait. You can use any flavored Greek Yogurt of your choice. If you don’t have Greek yogurt on hand, feel free to strain out some extra liquid from the regular Homemade yogurt using a cheesecloth and use that. You could use honey, agave, or any other sweetener of your choice.
Ingredients to make Yogurt Banana Blueberry Granola Parfait - (serves 2)
Yogurt - 1 cup (preferably Greek Yogurt) Blueberry - ¾ cup (I used frozen blueberries) Banana - 1 (sliced) Granola - ¼ cup Honey - 2 tsp
Procedure to make Yogurt Blueberry Banana Granola Parfait -
Mix the honey into the yogurt. I used plain Greek yogurt. If you don’t have Greek yogurt, you could use regular yogurt after straining it through a cheesecloth.
I used frozen blueberries that I defrosted in the microwave until they were slightly soft.
Now, all we need to do is start layering the bowl or the glass that we are going to serve the Parfait.
I started with a layer of sliced bananas and then topped it with blueberries followed by a layer of granola and then the yogurt. Repeat the layer once more or until the glass is full.
Serve immediately.
Expert Tips
Greek yogurt works the best. If using regular yogurt, strain the excess liquid and use it in the parfait. This breakfast parfait works great with frozen fruits as well. Feel free to mix and match the flavors. This fruit parfait can also double as a dessert if you are in the mood for something sweet.
