The Best Zucchini Pizza Bites
I don’t know about you, but my household is seriously obsessed with pizza. And I get it, what’s not to love?! So when we need a healthier version or have some extra zucchinis laying around, I love to make some pepperoni zucchini pizza bites! They make a wonderful after school snack and are a great way to eat some extra veggies! Simply season the zucchini slices for loads of flavor and top them off with tomato sauce, cheese, and mini pepperonis! You can add different toppings if you’d like, but I would stick to just one or two toppings since they are such small bites. You can whip these up in less than 20 minutes! For a full meal, try serving them with garlic bread and an easy Italian chopped salad!
Ingredients Needed
Zucchini: I light to slice these into 1/4 inch thick rounds. I find this is the perfect thickness for cooking the zucchini quick and it holds up to the tomato sauce and cheese. Olive Oil: A little bit of olive oil is good to coat the zucchini slices and help the seasonings stick. Seasonings: To season the zucchini slices and add extra flavor, add onion powder, garlic powder and Italian seasoning. Tomato Sauce: Use your favorite brand of tomato sauce or make your own homemade tomato sauce! Mozzarella Cheese & Parmesan Cheese: I like to top the zucchini slices off with mozzarella cheese and parmesan cheese for added flavor! Mini Pepperoni: If you want, you can make pepperoni pizza bites with some mini pepperoni. Feel free to omit to keep this vegetarian.

Tips for Success
Don’t over cook them! To make sure that the zucchini pizza bites don’t get too soft or soggy, make sure you don’t over cook them. Like it spicy? Add a sprinkle of crushed red pepper on top, or serve with your favorite hot sauce! If your zucchinis are on the small side, you can slice them on a diagonal so that there is plenty of topping space! If you want the cheese to get a little crispy, switch to broil for the last minute of cooking! Just keep a close eye on the pizza bites so that they don’t burn!
